Mashed Potatoes with Cauliflower

  • 3 medium/large red potatoes, rinsed and skin parts removed sliced into 1 ½″ pieces
  • Cauliflower rinsed and cut into 1 ½” pieces - 3 cups
  • Butter – 2 to 4 tablespoons
  • Milk - ¼ – 1/3 cup as per the preferred texture (cream can be used as a substitute
  • for richer taste)
  • Salt - ½ – ¾ teaspoon
  • Cracked pepper to taste

This recipe has a hidden serving of cauliflower, which is easy to cook and great to taste. This recipe includes ideal one-to-one amount of cauliflower to potato, but can vary as per the individual taste.

Boil the potatoes in water with salt added to it. After cooking them for 15 minutes, add cauliflower to the boiling water. Cook them for 5 more minutes until the vegetables become fork tender. Drain the water and place the vegetables in an empty pot. Let the potatoes and cauliflower dry for 2 to 3 minutes. Add salt, pepper, ¼ cup milk and 2 tablespoons of butter to the mix and mash them with a hand-held potato masher till it gets the preferred texture. Add butter and/or milk and mash it again. Add salt/pepper, mix it well and serve the dish.
