Potato Pancakes

  • Potatoes - 4 large
  • Onion - 1
  • Egg - 1 (beaten)
  • Salt - 1 teaspoon
  • Flour - 2 tablespoons
  • Vegetable oil - 2 cups for frying
  • Black pepper according to the taste

Potato Pancakes are primarily made using potatoes, eggs and flour, but often onion or garlic is used to add a distinct flavor. These pancakes can be topped with sour cream, cottage cheese or sweet condiments, such as apple sauce or sugar. Mashed potato pancakes are popular with almost everyone.

Take four potatoes, peel them properly and soak them in cold water for 5 – 10 minutes. Remove potatoes from the water. Finely grate potatoes as well as onions with the help of a food processor. Place the grated vegetables on a dish drier or tea towel to drain the excessive water. Beat an egg with black pepper and salt in a large bowl. Add around 2 to 4 tablespoons of flour to the batter and
mix until it gets thick enough.

Take oil a heavy skillet pan and heat it on medium flame. When the oil is hot, gently drop two or three (1/4 cup) mounds. Flatten the mound until it is 1/2 inch thick and fry them. Cook until the color changes to golden brown. Transfer it on the paper towel so that oil is soaked completely.
